The plum cake was the one that added sweetness to the special celebrations of Christmas. So, we are here with an eggless Christmas plum cake recipe that will give you some Christmas vibes. Ingredients
- 1 cup all-purpose flour
- ½ cup whole wheat flour
- 1 tsp vanilla extract or 1 tsp vanilla powder
- 1 tsp baking powder
- ½ tsp baking soda
- 5 to 6 plums – chopped finely
- ⅓ cup chopped cashews
- ½ tsp cinnamon powder
- ½ cup soy milk or dairy milk or almond milk or thin coconut milk
- 2 tbsp apple cider vinegar or white vinegar
- ¼ pinch of grated nutmeg or nutmeg powder
- ⅔ cup oil or melted butter
- ¾ or 1 cup organic cane sugar or golden sugar or powdered sugar
Recipe / Instructions
- Oil a round cake baking container with oil or butter.
- Preheat the oven to 170 degrees C.
- Sieve the all-purpose flour, whole wheat flour, ground nutmeg, cinnamon powder, and baking powder together in a big bowl.
- Include the oil or dissolved butter and blend delicately.
- Include the sugar and mix well.
- Now add the chopped fresh plums and cashews.
- Blend in these tenderly in the cake batter.
- Add apple cider to soy milk and then add baking soda to this blend.
- Mix tenderly and add this foamy, bubbly mixture to the cake batter.
- Include the vanilla powder or vanilla extract.
- Mix quickly.
- Pour the cake batter in the prepared cake baking container.
- Bake at 170 degrees C for around 36 to 40 minutes or until a toothpick inserted in the centre comes out clean or with a few crumbs.
- When the cake becomes somewhat cool, take it out from the container and invert it on a wire rack to cool off totally.
- Serve the yummy eggless fresh plum cake along with a cup of tea or coffee.
Additional Notes
- You can use oil instead of butter.
- You can use regular milk instead of soy milk.
- Add some more dry fruits like apricots, walnuts, raisins, almonds, etc.
- The cake is sweet and to get more sweetness; you can add 1 more cup of sugar.
- If the cake is browning quickly during the baking process, cover it with an aluminium foil or baking paper.
