The hard part of being a mother is feeding your kid’s fruit and hiding from them pieces of cake. But as they say, “Always remember, Mom has a way for everything.” We couldn’t help but agree because she surely has a way of feeding her children fruits. If not in the original form, then in a cake.
Passion fruit, a type of berry with aroma, seeds, and sweet-sour flavour. The slightly acidic taste of the fruit makes it difficult for it to become friends with little munchkins. However, the existence of magnesium, calcium, iron, phosphorus, potassium, and sodium in the fruit helps prevent osteoporosis, improves immunity, keeps the heart healthy, etc. All these benefits make passion fruit the favourite of the mothers.

INGREDIENTS:
⅔ cups flour
1 teaspoon baking powder
2 large eggs
⅔ cups of sugar
1 cup of milk
1 tablespoon vanilla extract
2-3 ripe passion fruit
3 tablespoons unsalted butter
Ingredients for Passion Fruit Syrup
1 cup of sugar
1 cup of water
1 ½ cup passion fruit pulp
Ingredients for Passion Fruit Cheese Frosting
1 ½ cup unsalted butter, softened to room temperature
1 ½ cup cream cheese, softened to room temperature
2 teaspoon vanilla extract
1 cup sugar
1 cup passion fruit syrup or pulp
3 egg whites
METHOD
- In a large bowl, sift flour and baking powder. Lift the sieve high to give flour and baking powder a good airing.
- Then, to the baking powder and flour add unsalted butter, eggs, sugar in the mentioned proportions. If you are a vegetarian, you can substitute eggs with banana, baking soda, or flax seeds for a spongy base.
- Using the electric blender or hand whisker, combine the ingredients until you get a creamy, smooth consistency. After whisking the ingredients for one minute, if you still haven’t got the desired consistency, consider adding little milk, and then whisk.
- To the batter, either add chunks of passion fruit or the juice. This step will flavour the cake with the rich taste and benefits of passion fruit.
- Grease the cake tin and transfer the content from the bowl to the tin.
- Bake the cake in a preheated oven or microwave for 25-30 minutes until golden brown. Take a toothpick test to ensure that the cake is fully baked. If not, bake it for a few more minutes.
- Take the cake out of the oven and allow it to cool.
How To Make Passion Fruit Syrup:
- Add equal cups of sugar and water into a vessel and bring it to a boil.
- Stir until sugar is dissolved.
- Add pulp into the syrup and cook for at least one minute.
- Take off the pan from the heat and let it chill.
- You can either strain the syrup to discard the seeds or leave it as per your preference.
How To Make Passion Fruit Cheese Frosting:
Extra cheese and sweetness never hurt!
- In a roomy bowl, whisk together egg whites and sugar.
- Transfer the mixture into a pan and put it on medium-low heat.
- Now add butter, cream cheese, vanilla extract, and fruit pulp or syrup.
- Mix well until velvety smooth.
Assemble The Cake:
- Place the cake on a cake board or serving dish. Pour the prepared passion fruit syrup over the cake and garnish it with the seeds or sprinklers.
- Slice the cake into layers. Spread the cheese frosting on the top layer of the and repeat the process until all the layers are stacked.
- Cover the layers richly in the frosting and garnish the way you like.
