The love each one of us share for cake is indescribable. Be it on some special occasion or just when you are in the mood to satiate your cake cravings, we humans realize the importance of the invention of something like cakes. Now, we all know cakes come in various flavours and one such popular, yet offbeat cake flavour is coffee and chocolate. Both of these flavours are very much loved by people individually. But when they come together in a coffee chocolate cake, then mind you, the cake is sure to sweep you off your feet, for sure. Not many people know that chocolate compliments a coffee cake beautifully and make its flavour richer in taste and texture. You may have tried this sweet delicacy at some party or function, for sure. If you haven’t yet tried this beautiful blend of the two most amazing flavours in a cake, then you must try baking this cake at home for yourself. Here’s a simple recipe to lure you into baking this simple coffee chocolate cake that is covered with chocolate buttercream, espresso ganache and choco chips. Without much ado, let’s start baking this chocolate coffee cake; we are pretty sure you are going to have as much fun baking this as you had while relishing this.
Ingredients
1 3/4 cups flour All-purpose
2 cups sugar Granulated
3/4 cup cocoa powder Unsweetened
2 tsp baking soda
1 tsp baking powder
1 tsp salt
2 eggs Large
1 cup buttermilk
1 cup strong black coffee at room temperature
1/2 cup vegetable oil
1 tsp vanilla extract
Let’s Start Baking!
Preheat the oven at 350°F.
Take a large mixing bowl and pour sugar, flour, cocoa, baking soda, baking powder and salt. Whisk them together and keep this bowl aside.
Now take another bowl and pour eggs, buttermilk, coffee, oil and vanilla extract. Mix them well together.
Pour the mixed dry ingredients into the wet ingredients mixture. And mix them all together until all combined. Do not over mix.
Pour this batter into 2 9×2 inch round baking pans that have been properly greased with butter/baking spray/oil and lined up with parchment paper.
Bake the batter for about 35-38 minutes each or until the toothpick comes out clean when pricked.
Keep the cake aside until it cools down completely before you start frosting it.
For the frosting, take a large mixing bowl and pour butter, cocoa powder, vanilla extract and blend together.
Now alternating with some milk, add 1 cup of powdered sugar gradually. Keep mixing the batter until smooth and creamy.
For the espresso ganache, take a microwave-safe bowl and add chocolate chips, heavy cream, espresso powder and butter to it.
Heat the microwave at 30-second increments, meanwhile giving it a good mix in between.
Keep doing so until the ganache turns smooth and creamy in texture.
Now it’s time to assemble the cake together. Once the cake has cooled down properly, take one base and start frosting it with the chocolate frosting.
Once done, place teh another cake base on top of the first one and lay it up with a thick coating of chocolate frosting again. Make sure you frost the entire cake.
Give it a diagonal design by using the back of a spatula all around the cake.
Now pour the espresso ganache from the top, and with the help of a spatula, spread it evenly. Let it drip from its sides.
Sprinkle some chocolate chips from the top.
And Voila! Your coffee chocolate cake is ready to be served.
