First things initial

3 ½ cups organic flour (gluten-free) at a ratio of 1:1 with baking flour
1 ¼ cups of coconut or cane sugar
2 teaspoon of baking powder
1 teaspoon of baking soda

2 teaspoons of apple cider vinegar
⅓ cup coconut oil or vegan butter (or melted)

Instructions
Make a two-layer cake employing a boxed cake combine and a touch of blue food coloring. Build the cake in line with the box. Put aside until cooled. Level the cake with a knife. Take successive layers and cut out the center departure around a pair of inches around the perimeter. Frosting for the cake top:
Mix the water and gelatine in a safe microwave bowl. Then place the bowl in the microwave and heat on a high-temperature setting for about 15 to 20 seconds. Let the gelatin cool off to a lukewarm condition, before adding it to the cream. But, do not let it get cold due to it’s going to appear like a gel. In the meanwhile, in an electric mixer, whip the cream, sugar, and vanilla on high or thickened. Add the gelatin to the topping slowly and beat on high till the topping forms stiff peaks. Once able to serve, take the cupcakes from the electric refrigerator and prime them with the topping. You’ll be able to use this topping icing like you’d the opposite icing. It’ll hold its form for a minimum of a pair of hours and may keep it cold for an extended time.
