With the festivities around the corner, it is only natural to be in love with desserts. Desserts remind everyone of the happy and jovial times that they have spent with their family and close friends. Adding desserts to any celebration is the perfect addition of sweetness. Maybe that is the reason why celebrations are dull without something sweet!
One of these super interesting desserts is undoubtedly pastries. Now for those who are dessert fanatics and at the same time maintaining a cruelty free vegan or vegetarian life, eggless cake and pastries are perfect alternatives!
A vegan pastry recipe is perfect for Christmas parties, or even to take to a bake sale or for birthday celebrations. So here are some different types of pastry recipes that will introduce you to the world of eggless desserts!
Dry tea pastry
Ingredients:
- ¾ cup of self rising white and whole wheat flour
- ½ teaspoon baking powder
- ½ cup of each raisins, golden raisins & mixed candied citrus peel mixed together
- 1¼ cup of cold peach tea
- 2 teaspoon Soy milk
- 4 teaspoon brown sugar
- 1 teaspoon salt
Directions:
Soak the raisins in the cold tea overnight. Add the Soy milk, flours, baking powder and sugar to the raison mix and stir together well. Pour into a non-stick 1 pound bread pan that has been well greased. Bake at 176°C for 1 hour. Let the pastry rest for 10 minutes and take out of the pan to cool.
Spice applesauce pastry
Ingredients:
- 2 cup of self-rising white flour
- ½ teaspoon each salt and baking powder
- ½ cup of vegan butter
- ½ cup of lite brown sugar
- ½ cup of each chopped raisins, dates and pecans
- 4 cup of water
- ½ teaspoon cinnamon powder
- ½ teaspoon clove powder
- ½ teaspoon nutmeg powder
- 1½ cup of apple cider-unsweetened
- 2 teaspoon Soy milk
Directions:
Bring to boil raisins, dates and spices in 4 cups of water, drain and cool. Sift baking powder, salt and flour in a pan and add brown sugar, vegan butter and apple cider and mix well. Add the rest of the items and mix then pour into a non-stick bake pan. Bake at 176°C for an hour. Toothpick should come out clean. Cool and serve.
Apricot almond pastry
Ingredients:
- ½ teaspoon of baking powder
- 4 tablespoon of lite brown sugar
- 1½ cup of self-rising whole wheat flour
- 1 cup of dried apricots and ground almonds (chopped)
- 1¼ cup of Soy milk
- 1 ¼ cup of roasted almonds (chopped)
- 1 teaspoon of almond flavoring
- ¾ cup of vegan butter
- 1 teaspoon salt
Directions:
Cover apricots with soy milk and set aside overnight. Mix baking powder, flour and ground almonds in a bowl. Melt sugar and soy milk together and add to flour and mix well. Add the apricot mixture, roasted almonds and almond flavoring. Combine well. Put into a non-stick greased 6″ round cake pan and bake at 176°C for 50 minutes. Test and toothpick should come out clean. Cool in the pan.
Rich chocolate pastry
Ingredients:
- Vegan butter (to grease the pans)
- 1¾ cup of all purpose flour
- 2 cup of sugar
- ¾ cup of cocoa powder
- 2 teaspoon baking soda
- 1 teaspoon baking powder
- 1 teaspoon salt
- 1 cup of vegan buttermilk, shaken
- ½ cup of vegetable oil
- ½ cup of Soy milk
- 1 teaspoon pure vanilla extract
- 1 cup freshly brewed coffee
Directions:
Preheat the oven to 150° C and grease the pans. Mix all the dry ingredients together and combine vegan buttermilk, oil, Soy milk, vanilla and coffee to this mix. Empty batter into pans and bake for 35 minutes. And your pastry is ready!
Easy fruit pastry
Ingredients:
- ½ cup of apple sauce
- ¾ cup of water
- ½ cup of sugar
- 2½ cup of mixed dried fruit
- ½ cup of soy milk
- 1½ cup of flour
- 2 teaspoon baking powder
Directions:
Put the apple sauce, water, sugar, and dried fruit in a saucepan. Bring it to a boil and simmer for 20 minutes. Allow it to cool then combine Soy milk into the fruit mixture. Sift flour and baking powder into the mixture and add water if necessary. Pour mixture into pan and sprinkle brown sugar on top. Then pop it into the oven at 150 ºC and bake for 90 mins.
You can also prepare pastry cream to top these desserts off and decorate them in a fancy manner while serving them to your guests. So get baking!
