Strawberry Cake Recipe

Ingredients For Pink Heaven Strawberry Cake
- White Sugar – 2 Cups
- Pack of Strawberry Flavor – 1
- Butter – 1 Cup
- Softened Eggs – 4 (at Room Temperature)
- Sifted Cake Flour – 2 3/4 Cups
- Baking Powder – 2 1/2 Teaspoons
- Whole Milk – 1 Cup (at Room Temperature)
- Vanilla Extract – 1 Tablespoon
- Crushed Dried Strawberries – 6
- Strawberry Puree Made From Frozen Sweetened Strawberries – 1/2 Cup
Ingredients for Strawberry Cream Cheese Whipped Cream
- Heavy Cream – 3 Cups
- Powdered Sugar, Divided 1 Cup (125g)
- 8 Oz Cream Cheese, Left At Room Temperature Until Partially Softened (About 20 – 30 Minutes)
- Vanilla Extract – 1/2 Tsp
- Strawberries, Hulled And Sliced Into Pieces Slightly Under 1/2-Inch – 1 1/2 Lbs
- Sliced Strawberries For Decorating (Optional)
Method for Baking
- Preheat the oven to 350 degrees Fahrenheit (175 degrees C).
- Take a large bowl and blend the butter, sugar and dry strawberry cream together the butter, sugar and add dry strawberries and keep mixing until light and fluffy.
- Now, start beating the eggs one by one and mix well after each. Add the sifted flour and baking powder to the eggs and stir into the batter alternately with the milk.
- Once mixed well, blend in strawberry and vanilla puree.
- Now, grease and flour two 9 inches round cake pans. Divide the batter evenly between the prepared pans.
- Let the mixture bake for approximately 25 to 30 minutes in the preheated oven. Once done, check if a small toothpick or knife inserted comes out clean.
- Allow the cakes to cool in their pans on a wire rack for at least 10 minutes, before tapping out to cool completely.
Once the cakes are cooled, start frosting the cake with Strawberry Cream Cheese Whipped Cream and store cake in an airtight container in the refrigerator.

Method for Frosting:
- Take a bowl of an electric stand mixer fitted with the whisk attachment and whip heavy cream until soft peak forms.
- Now, take 1/3 cup powdered sugar and add it to the cream and whip until stiff peaks form. The stiffness is important to avoid runny frosting.
- Once done, scrape cream out into a separate bowl.
- Now, add cream cheese to the bowl of stand mixer fitted with paddle attachment.
- Start whipping cream cheese until it becomes smooth and fluffy
- Now, add in the remaining 2/3 cup powdered sugar and vanilla
- Add strawberries and mix until the cream becomes uniform in color.
- Lastly, remove the bowl from stand mixer, and add whipped cream to it. Now, fold the same into the mixture.
- Frost over cooled cake.
